Easy Vegan Mince Pies

So easy, my pre-schoolers made them! Easy, vegan mince pies that are perfect for, well, eating piles of in the run up to christmas :) I love them with a dollop of soya cream on.

Ingredients:

1 sheet Jus Rol shortcrust pastry

1 jar mincemeat (most are vegan but double check to be sure!)

Plant milk (optional)



Method:

Preheat oven to 180*C.

Cut out circles of pastry to line a 12 hole bun tin.

Put a teaspoon of mincemeat in each circle.

Cut a smaller circle / heart / festive star shape and pop on top of the mincemeat.

Brush with a little milk if desired.

Bake for 9-12 minutes, until lightly golden.Let cool slightly, then stuff them in your face :)

Hope you are all keeping warm in the snow today, it's been mad weather here - crazy deep snow and minus 7 degrees when I got in my car earlier! A friend mentioned having a delicious cream of celery soup in a cafe recently and I have been dying to recreate it ever since, so today when the snow day hit and we needed an ultra warming lunch - I did just that! A perfect winter warmer that is deliciously creamy, tasty and satisfying. You will need a high speend blender to get this soup super smooth, or you could try soaking your cashews overnight first o they are softer to blend.


Ingredients:
1 bunch of celery
2 cloves of garlic
1 large onion
1 courgette
1 potato
1 cup of cashews
2 cups of plant milk.
Approx 800ml veg stock - enough to cover all the veg plus about 1 inch.


Method

Add first 4 ingredients to a large pan with a glug of oil and cook for 5-10 minutes until softened but not coloured. Add all additional ingredients and cook until veg are all soft and cooked. Approx 15 mins.

A New Year & A Happy Heart

Happy New Year lovely folks - I hope 2019 is a magical one for you.

It's been a long time since I posted in this space, but I have felt the pull to properly write again these past few weeks and the posts are spilling from my fingers, so, tentatively, here I am.

In one of my last posts about our story, I wrote about how after moving to our farm, taking on more responsibilities, and feeling utterly burnt out, we had moved towards simplifying our lives.

Gaz left his main job in the first quarter of 2018, and we have been busy learning to live on significantly less, whilst continuing to find and reap the rewards (and facing the challenges) that working towards a living a simpler life is giving our family.

Continuing to simplify has been a slow and steady process over the rest of year, and it has extended to so much more than just our work and material things - but letting go of jammed packed schedules, ideas, relationship cycles and so many deeper issues too.

The Stuff, Or The Idea?

The first week of January and adverts and social media posts are awash with new planners, fancy home organisational products, gym / diet plans and shiny new workout clothes.

Don't get me wrong, I love the fresh energy of a new year - reflecting and organising and thinking of what we have learnt and how we want to move forward in our lives - but it's also made me think a lot about how we are sold so much 'stuff' with the idea of improving our lives - and how in continually accumulating things, we can actually do the opposite.

A few years ago, we'd have been the people battling the crowds in IKEA, desperate for more storage to make the stuff we'd accumulated that Christmas, and in the many years before, more manageable. We'd be the people buying sports clothes and workout gear in Decathlon thinking of our newer fitter, sportier selves. Planning expensive outings thinking they'd be the things that would give us more quality time with the kids. Stocking up on…
